Clos D'Audhuy (Cahors) - French Red Wine

Harvest: A perfect maturity of tannins seeds and dandruff, hand in small crates. The harvest is then carefully destemmed, sorted, and slightly streaked.

Winemaking: In small thermo-regulated 15 Hl stainless steel vats where we attach ourselves, for about 25 days, to sublimate the fruit by light pumping over and many pigeages for a finesse extraction.

Maturing: For 12 months, in 400L barrels (half new and half used) to keep the fruity and freshness of our wines.
